Homemade Garlic Sauce

Last weekend we decided to be super lazy and eat pizza while watching The Good Wife (yay for lawyer series) on the couch, but no matter how lazy you are, you can never be too lazy to make garlic sauce for your pizza. And if you didn’t know already.. garlic sauce makes every pizza better!

This simple garlic sauce can easily be put together with ingredients you probably have at home already, it takes about 2 minutes to make, and you can change it up the way you like it!

I normally find it kind of annoying when recipes are described with measurements like “a dash of” or “a squeeze of,” but I have learned that sometimes there’s no way around that.. That means that that’s how I’m gonna share this recipe with you, but at least I made a picture that might help you see what I’m actually talking about here:

Are you ready?

  • 1 box of crème fraîche or sour cream
  • 1 garlic clove, minced
  • A squeeze of lemon juice
  • A squeeze of ketchup
  • A pinch of salt and pepper, to taste
  • Spices or herbs of your choice – I used oregano

  • Add all ingredients to a bowl
  • Stir until everything is mixed well.
  • Let sit in fridge while preparing pizza.
  • Enjoy!

Don’t ask me how crème fraîche and sour cream works, but the more you stir or the longer you let it sit in the fridge, the more “saucy” it gets. You can use a big or small garlic clove depending on how “garlicy” you want it, and you can even try adding other spices to make the sauce more fancy – it’s up to you!

Are you still wondering if you really can bother to make this sauce the next time you eat pizza? The answer is yes, you can!

Mini Pizzas in Muffin Tins

Since we had some minced meat that was about to go bad in the fridge, we had to move “Meatless Monday” over to Tuesday this week (we’re having cauliflower nachos tomorrow, yay!). For some reason we’ve been eating pretty much only vegetarian meals and chicken all January, but today we decided to make mini pizzas, and they turned out really delicious!

Mini Pizza

Let me give you a simple explanation of how they are made:

  • Cut tortillas into round pieces and put them in a muffin tin
  • Fill with whatever you like to put on your pizza normally – simple or advanced, vegetarian or with meat, it’s up to you!
  • Top it with cheese, more cheese and some oregano

Today we decided to make a simple version: Tomato sauce with minced meat, pineapple on mine (I mean of course, duh), topped with cheese and my moms homemade pizza spice (which is mostly home grown oregano). Simple but delicious!

Slow Cooker: Broccoli & Cheese Soup

Recently we bought a slow cooker, and the more meals I make using it, the more I love it! Yes, I managed to burn the second thing I ever tried to make in it, even when I followed the recipe (I think?), but I can’t let such a thing stop me from trying out more recipes, right? So today I made a tasty broccoli and cheese soup that I served with garlic bread.. Yummy!

I wonder why slow cookers seem to be so common in America, but not in Europe.. Maybe we’re just not spending enough time on Pinterest where we can find so many wonderful recipes that require a slow cooker, haha!

I found the recipe here, and I will definitely be making this soup again! It’s so delicious!
